I grew up in a remote mountain town in the Philippines. My family led a fairly idyllic life, raising goats and growing vegetables and fruits. My brothers and I would play in the nearby river and mountains, reading and doing all the fun things in the nature without worries.
Later I went to college abroad, and I would go back about once a year to visit. That’s when I started to notice changes in my hometown. I watched the river turn from clear to brown to black. Houses and farms replaced the trees. There was smog, and plastic garbage piled up. Seeing my childhood home go from a clean mountain town to a deforested, polluted, and overcrowded place really impacted me. Over time, I began to see my hometown as a place of unsustainable development.
While I worked on addressing deforestation with the United Nations in Indonesia, I vividly remembered seeing forests burned into black landscapes as far as the eye could see. Experiences like that have both terrified me and lit a fire within me to work harder. Thankfully, I began to see that there is another path. I saw success stories in places I worked — Indonesia, Costa Rica, Ecuador — places that are investing in nature and changing the culture and the mindset of what development looks like. I saw places realizing not only economic benefits — from, say, tourism — but also more benefits of ecosystem services.
The work of WWF and other organizations is critical in promoting success stories according to their local context. There are two kinds of people: those who like to pack up leftovers as soon as dinner is over, and those who let leftovers sit out for a few hours so they can cool down.
However, both leaving leftovers out for a long period of time and adding hot items to the fridge can cause problems.
Whether you should immediately put food in the fridge or let it sit out to cool depends on its temperature. Dangerous bacterial (细菌的) growth happens between 41 and 135 degrees F. Potentially harmful bacteria grow most rapidly at these temperatures.
Placing lots of hot food in the fridge can raise the temperature of the fridge into this danger zone. Fridge temperatures should always be set below 40 degrees F. This may help the food get out of the danger zone as fast as possible.
However, there’s no harm in putting hot food directly into the fridge if you need to. If you are a forgetful person, or if you won’t be around to store the food after it has cooled enough, go ahead and put it in the fridge. Your fridge can handle the heat and get the food cooled quickly.
Food should never stay out at room temperature for more than two hours. Leftovers can become breeding grounds (滋生地) for dangerous bacteria if they’re left out too long and can make people sick.
“It is OK to leave the food cooling outside before you hit the two-hour mark,” says Serena Poon, nutritionist of Le Cordon Bleu’s Grand Diploma training program. “In fact, the sooner you can get your leftovers in the fridge, the better.”

Climate change is a big problem for corals. I dive to find out. By keeping track of corals in French Polynesia, I hope to determine how much stress they’re under.
Coral reefs are like underwater cities made up of tiny animals called corals. They are in symbiosis with tiny plants called algae (海藻). The algae make food for the corals using sunlight. This is called photosynthesis (光合作用). In return, corals produce carbon dioxide and waste, which can be used by the algae as raw materials for photosynthesis.
In French Polynesia, there’s a place called Moorea where scientists study corals. My colleagues and I use special floating platforms to look at the corals from different angles. This helps us find problems, like when other plants try to take over.
Two types of coral, Acropora pulchra and Acropora cytherea, are being studied. The pulchra stays its usual dark yellow color, but the cytherea, which is usually light brown or purple, has turned white. This white color is not good. It happens when the water gets too warm for too long. The corals get stressed and push out the algae. Without the algae, the corals can’t get food and they turn white, which can lead to them dying.
When my colleagues and I go diving, we use a plastic sheet to help us look at the corals and write down what we see. We check the water temperature, the color of the corals, and if we see any signs of the corals being in trouble.
Some corals seem to be stronger and can handle warmer water better than others. We want to find out why this is, so we can help protect corals. But the best way to help corals is to stop pollution and global warming, which are making the oceans too warm for them.
